It’s hard to always been good when you’ve had long day. You don’t even have time to breathe let alone go shopping and make a healthy dinner! It is ever so tempting to skip your workout and run through a fast food joint just to make your day just a little be faster and easier. After all you have had a hard day and deserve a break, right? However, you know that you’d feel better sticking to your promise to yourself and your family to eat healthier. So what do you do?
If you are like me you probably end up at a sub sandwich shop ordering some chicken bacon ranch sandwich, justifying to yourself “It is not total junk food, it’s not fried and I got the baked chips.” Then to compensate you add another 15 minutes to your power walk out of the time you saved from not making dinner. Yea, you know who you are. That is ok. We all do it. It is my goal to reduce the amount of times a week I do this. So how does one keep from being in this situation? Prepare.

I am not a person who likes to pre-plan every meal for the week. I am not very organized and I never really know what I am going to be in a mood to eat so planning the menu for the entire week is difficult for me. Make extra portions that can be frozen or refrigerated and reheated or cooked later. Make twice the recipe and then freeze half for later. Make an extra big salad keeping the extra for later in the week. Pre-cook chicken breast that can be chopped and added to the salad or can be used a quick wrap or sandwich. Have quick healthy snacks on hand that you can grab and take with you; fruit, cheese sticks, nuts, veggie sticks, cooked chicken or turkey breast, protein bars, etc. This will help curb your appetite until you can make something healthy at home. These are a few things that have helped me eat healthier and has helped to keep me from the fast food drive thrus and I am the least organized domestic engineer on the planet.

CHINESE CHICKEN SALAD
4 boneless, skinless chicken breasts
1 1/2 tbsp Soy sauce
1 medium head of cabbage, shredded
6 chopped green onions
2 pkgs chicken flavored Ramen noodles
1/2 cup plain almonds, sliced
1/4 cup sesame seeds
3/4 cup extra-virgin olive oil
1/4 cup sesame oil
1/4 cup rice or white vinegar
1 of the seasoning packets from the Ramen noodles
1 tbsp Splenda
Preheat oven to 350 degrees. Place chicken breasts on foil and pour soy sauce evenly over chicken. Wrap in foil to make a packet. Bake for 35 minutes or until chicken is done. Remove from oven, cool enough to handle and cut into bite-size pieces. Toast noodles and almonds in a non-stick skillet, stirring so as not to burn. Add sesame seeds at last minute and brown lightly. Mix together oil, vinegar, seasoning packet and Splenda. Put cabbage, onion and chicken pieces into a large bowl. Pour oil mixture over top of ingredients in bowl and mix well. Add toasted noodles, almonds and sesame seeds. Mix again. Ready to serve.
NOTE: This makes enough for several servings.
TASTY LENTIL SOUP WITH CHICKEN
8-oz (1 cup) dried lentils, sorted and rinsed
1 tbsp olive oil
1 lb skinless chicken breasts, cut into 1″ chunks
1/2 cup chopped onion
2 medium yellow squash, diced
2 cups sliced carrots
1 cup sliced mushrooms
1 tbsp basil
4 1/2 cups low-sodium chicken broth
1/2 tsp salt
1/4 tsp black pepper
28-oz can Italian-style diced tomatoes, undrained
Grated Parmesan cheese, optional
Heat olive oil in a Dutch-oven or large soup pot over medium-high heat. Cook chicken with onion until chicken is no longer pink in the center, about 5 minutes. Stir in remaining ingredients, except cheese. Heat to boiling, stirring occasionally. Reduce heat to medium-low. Cover and cook about a half hour until the lentils are tender. Sprinkle with cheese when serving, if desired.
